Whisk vigorously in a W motion for 20 to 30 seconds until fully dissolved and slightly frothy. 4. Fill a tall glass with ice. 5. Pour 6 oz cold milk over the ice. 6. Pour the whisked matcha concentrate over the milk and ice. The matcha will sink and create a layered effect -- stir before drinking. 7. Add sweetener if desired.
Why You Still Need Hot Water for Iced Matcha
This is the most common question about iced matcha. Matcha powder does not dissolve in cold water -- the particles clump together and sink to the bottom, producing a gritty, uneven drink.
The solution is to dissolve the matcha in a small amount of hot water first (2 oz is enough), then pour that concentrate over ice and cold milk. The small amount of hot water is immediately diluted by the cold milk and ice, so the final drink is cold.
Some recipes suggest shaking matcha with cold water in a shaker bottle. This works partially but produces a less smooth result than the hot-water dissolve method.
Tips and Common Mistakes
Use quality matcha. Cold temperature and ice dilute the matcha flavor significantly. Low-grade matcha produces a weak, bitter iced latte. Ceremonial or premium grade holds up better.
Do not skip the sift. Clumps are more visible and more unpleasant in a cold drink than a hot one.
