How to Make It

Follow these steps in order. The most common mistake is skipping the sifting step, which causes clumps.

1. Sift 1 tsp (2g) matcha through a fine mesh sifter into your bowl or cup. This removes clumps and is not optional. 2. Add 2 oz (60ml) of hot water at 175F (80C). If you do not have a thermometer, bring water to a boil and let it cool for 2 to 3 minutes. 3. Whisk vigorously in a W or M motion (not circular) for 20 to 30 seconds until the matcha is fully dissolved and a light foam forms on top. 4. Steam or heat your milk separately. For a hot latte, heat to 150F (65C). For an iced latte, use cold milk. 5. Pour the whisked matcha into your cup, then add the milk. For a hot latte, pour milk over matcha. For an iced latte, add ice first, then cold milk, then pour matcha over the top. 6. Add sweetener if desired. Taste before sweetening -- good ceremonial matcha is naturally sweet.

Tips for the Best Result

These details separate a good matcha latte from a great one.

Use water at 175F (80C), not boiling. Water above 185F destroys L-theanine and chlorophyll, producing a bitter, dull-colored result.

Always sift. Matcha clumps on contact with moisture. Sifting takes 10 seconds and prevents a gritty texture.

Whisk in a W motion, not circular. The W motion creates more surface agitation and produces better foam.

Use 2g of matcha, not more. More matcha does not mean better flavor -- it means more bitterness. If you want stronger flavor, use higher quality matcha.

Common mistakes to avoid:

- Water too hot: produces bitter, dark-colored matcha. Fix: let boiling water cool 2 to 3 minutes. - Skipping the sift: produces clumpy, gritty texture. Fix: always sift. - Wrong ratio: too much matcha makes it bitter; too little makes it weak. Fix: use exactly 2g (1 tsp) per serving. - Circular whisking: produces less foam and uneven mixing. Fix: use W or M motion. - Cold water for dissolving: matcha does not dissolve in cold water. Fix: always use hot water for the initial dissolve, even for iced lattes.

Vanilla matcha latte: Add 1/4 tsp vanilla extract or 1 tsp vanilla simple syrup to the milk before combining.

Strawberry matcha latte: Add 2 tbsp strawberry puree (blend fresh or frozen strawberries with a little sugar) to the bottom of the glass before adding milk and matcha.

Protein matcha latte: Add 1 scoop (25g) of unflavored or vanilla protein powder to the milk and shake or blend before combining with matcha.

Dairy-free: Use oat milk, almond milk, or coconut milk. Oat milk produces the creamiest result.

Storage

A matcha latte is best consumed immediately. The foam dissipates within a few minutes and the matcha can settle.

If you need to prepare ahead: whisk the matcha paste (matcha + hot water only, no milk) and store in a sealed container in the refrigerator for up to 24 hours. Add milk when ready to serve.

Do not store a fully assembled matcha latte -- the milk and matcha separate and the texture degrades.
