What You Need

Ingredients for one 8-inch matcha cake:

- 1.5 cups (190g) all-purpose flour - 2 tbsp (12g) culinary grade matcha powder - 1.5 tsp baking powder - 1/4 tsp salt - 1/2 cup (115g) unsalted butter, softened - 1 cup (200g) granulated sugar - 2 large eggs, room temperature - 1 tsp vanilla extract - 3/4 cup (180ml) whole milk, room temperature

For the frosting: 1 cup (230g) unsalted butter, 3 cups (360g) powdered sugar, 2 tbsp heavy cream, 1 tsp vanilla extract, optional: 1 tsp matcha for a green tint.

How to Make It

1. Preheat oven to 350F (175C). Grease and flour an 8-inch round cake pan. 2. Sift together flour, matcha, baking powder, and salt in a bowl. Set aside. 3. Beat butter and sugar together until light and fluffy, about 3 to 4 minutes. 4. Add eggs one at a time, beating well after each addition. Add vanilla. 5. Add the dry ingredients in three additions, alternating with milk, beginning and ending with dry ingredients. Mix until just combined -- do not overmix. 6. Pour batter into prepared pan and smooth the top. 7. Bake 28 to 32 minutes until a toothpick inserted in the center comes out clean. 8. Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely before frosting.

Matcha Buttercream Frosting

Beat 1 cup softened butter until fluffy. Gradually add 3 cups powdered sugar, beating on low. Add 2 tbsp heavy cream and 1 tsp vanilla. Beat on high for 2 minutes until light and fluffy. For a matcha frosting, sift in 1 tsp matcha and beat to combine. Adjust consistency with more cream (thinner) or powdered sugar (thicker).

Tips for the Best Result

Use culinary grade matcha, not ceremonial. Ceremonial grade is too delicate for baking -- the heat destroys its subtle flavor notes and the cost is not justified. Culinary grade has a stronger, more robust flavor that holds up under heat.

Sift the matcha with the flour. Matcha clumps easily and sifting ensures even distribution throughout the batter.

Do not overmix after adding flour. Overmixing develops gluten and produces a tough, dense cake. Mix until just combined.

Room temperature ingredients matter. Cold butter will not cream properly; cold eggs can cause the batter to curdle.

Variations

Matcha layer cake: Double the recipe and bake in two 8-inch pans. Stack with matcha buttercream between layers.

Matcha and white chocolate cake: Add 1/2 cup melted white chocolate to the batter. White chocolate and matcha are a classic pairing.

Matcha and red bean cake: Fill layers with sweetened red bean paste (anko) instead of or alongside buttercream.

Matcha chiffon cake: Replace butter with vegetable oil and separate eggs, folding whipped egg whites into the batter for a lighter texture.
