Coffee pH: What It Is, Why It Matters, and How to Lower It
What is pH and why does it matter for coffee?
pH is a measure of acidity on a scale from 0 to 14. pH 7 is neutral (pure water). Values below 7 are acidic; values above 7 are alkaline. The scale is logarithmic -- each unit represents a 10-fold difference in acidity. A drink at pH 4 is 10 times more acidic than one at pH 5, and 100 times more acidic than one at pH 6.
For coffee drinkers, pH matters because acidic beverages can irritate the esophagus and stomach lining, trigger acid reflux in susceptible individuals, and contribute to dental enamel erosion over time. The acidity of coffee comes primarily from organic acids -- chlorogenic acids, quinic acid, citric acid, malic acid, and acetic acid -- that are extracted from the bean during brewing.

Dark roasts are slightly less acidic than light roasts because roasting degrades chlorogenic acids. The difference is modest -- typically 0.1--0.3 pH units.
